Der Cà Sàrja Ripasso Superiore DOC ist in der Nase angenehm und intenvsiv duftend nach Waldbeeren, Konfitüre, Dörrobst und Veilchen. Im Geschmack ist der Ripasso Superiore DOC kräftig mit oppulenter Frucht und Pflaumennoten. Langer Abgang.

Die Weine für diesen Ripasso werden sorgfältig selektiert und anschließed mit dem abgepressten Trester, also den Beerenhäuten und Fruchtfleisch des Amaroneweines, nachvergoren. Anschließend wird der Ripasso 12 Monate im Eichenfass ausgebaut. Das Ergebnis ist ein Wein, der die Frische eines Valpolicellas mit den beerigen, pflaumigen Charakterzügen des Amarones in sich vereint.
